Instructions
In a large skillet, cook the beef and onion over medium heat until the meat is no longer pink and the onion is tender. Drain any excess fat. Stir in the chili powder, salt, garlic powder, cumin, oregano, and paprika. Set aside.
In a small bowl, mix together the enchilada sauce and green chiles. Set aside.
Heat the oil in a deep-fat fryer or a large heavy-bottomed pot to 375°F.
Place about 1/4 cup of the beef mixture in the center of each tortilla. Sprinkle with a tablespoon of cheese. Fold the sides of the tortilla up and over the filling, then roll the tortilla around the filling. Secure with a toothpick.
Working in batches, fry the chilitos until golden brown and crispy, about 2-3 minutes. Drain on a paper towel-lined plate.
Remove the toothpicks and serve with the enchilada sauce mixture on top or on the side for dipping.
