Mac and cheese has to be one of the ultimate comfort dishes out there. There’s something about a bowl of warm, cheesy goodness that can turn a bad day into a good one. One of my favorite mac and cheese recipes is David’s Tillamook Baked Mac-n-Cheese. It’s the perfect combination of creamy, cheesy, and crispy.
Ingredients:
- 16 oz Tillamook Medium Cheddar Cheese
- 16 oz Elbow Macaroni
- 5 Tbsp Butter
- 3 Tbsp Flour
- 2 Cups Milk
- 1 Cup Heavy Cream
- 1\/2 tsp Dry Mustard
- 1\/2 tsp Salt
- 1\/4 tsp Cayenne Pepper
- 1\/4 tsp Paprika
- 1 Cup Panko Bread Crumbs
- 1 Tbsp Olive Oil
Instructions:
Preheat oven to 375°F.
Boil macaroni in salted water until tender, usually about 8-10 minutes. Drain and rinse with cold water.
In a medium saucepan, melt the butter over medium heat. Whisk in flour and continue to whisk until smooth. Gradually whisk in milk and cream until no lumps remain. Add dry mustard, salt, cayenne pepper, and paprika. Keep whisking until the mixture begins to thicken, about 7-8 minutes. Turn off heat and add 12 oz of shredded cheese. Stir until melted and blended well.
In a small bowl, mix panko bread crumbs with olive oil until well coated.
Combine the cheese sauce with cooked macaroni in a large bowl. Pour macaroni mixture into a 9×13 inch baking dish. Sprinkle remaining 4 oz shredded cheese over the top. Cover with the panko bread crumbs.
Bake for 25-30 minutes, or until cheese is melted and bread crumbs are crispy.
