  • - 1 can chickpeas, rinsed and drained
  • - 1 red bell pepper, diced
  • - 1 yellow bell pepper, diced
  • - 1 large cucumber, diced
  • - 1/2 red onion, diced
  • - 1/2 cup kalamata olives, pitted and halved
  • - 1/4 cup chopped fresh parsley
  • - 1/4 cup chopped fresh mint
  • For the dressing:
  • - 1/4 cup extra-virgin olive oil
  • - 2 tablespoons fresh lemon juice
  • - 2 cloves garlic, minced
  • - 1 teaspoon dried oregano
  • - Salt and pepper to taste

Instructions
