Ingredients

  • 1 sheet of vegan puff pastry, thawed
  • 1/2 cup vegan cream cheese
  • 1/4 cup powdered sugar
  • 1/4 cup raspberry jam
  • 1/4 cup fresh raspberries
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1 tablespoon plant-based milk for brush the puff pastry

Instructions

1. Preheat the oven to 400℉ and line a baking sheet with parchment paper.

2. In a small bowl, mix the cornstarch and water until well combined. This mixture will thicken the raspberry cream cheese filling.

3. Add vegan cream cheese, powdered sugar, raspberry jam, fresh raspberries, vanilla extract, and almond extract to a mixing bowl. Mix until smooth and creamy.
