Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, firmly packed
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 1/2 cup whole milk
  • 1/2 cup grape jelly

Instructions

1. Preheat the oven to 350°F. Line a muffin tin with cupcake liners.

2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.

3. In a separate large bowl, cream the butter and peanut butter together until light and fluffy.

4. Add the granulated and brown sugar and continue to beat until well combined.

5. Add eggs one at a time and beat thoroughly after each addition.

6. Stir in vanilla extract.

7. Add the flour mixture in 3 batches, alternating with milk and beat until just combined.

8. Fill each cupcake liner 2/3 full with cupcake batter.

9. Spoon 1 teaspoonful of grape jelly into the center of each cupcake.

10. Bake for about 18-20 minutes or until a toothpick inserted in the center of the cupcake comes out clean.

11. Cool the cupcakes completely before frosting.

To make the cream cheese frosting:

1. In a medium bowl, beat the cream cheese until smooth.

2. Add the powdered sugar and vanilla extract and beat until combined.

3. Frost the cooled cupcakes with the cream cheese frosting.

4. Serve and enjoy!
