While the filling is cooking, make the mashed potato topping. In a large pot, boil 2 pounds of peeled and diced potatoes until they are fork-tender, about 15-20 minutes. Drain the potatoes and mash them with 1/2 cup of milk and 4 tablespoons of butter.

Now it’s time to assemble the shepherd’s pie. In a 9×13 inch baking dish, pour in the beef and vegetable mixture. Spread the mashed potatoes on top, smoothing them out with a spatula. Bake in the preheated oven for 25-30 minutes, until the potatoes are golden brown.

When the shepherd’s pie comes out of the oven, let it cool for a few minutes before serving. Grab a spoon and dig in!
