Growing up, the winters were always the perfect time for homemade soups and warm comfort food. One of my all-time favorite soups is the classic Jason’s Deli Broccoli Cheese Soup. With its rich and creamy texture, it’s the perfect dish to warm you up on a cold winter evening.
Ingredients
- - 1/2 cup (1 stick) of unsalted butter
- - 1/2 cup of all-purpose flour
- - 2 cups of whole milk
- - 2 cups of half and half
- - 1/2 cup of finely chopped onion
- - 1 clove of minced garlic
- - 4 cups of chicken broth
- - 1 pound of fresh broccoli florets
- - 1/4 teaspoon of black pepper
- - 1/4 teaspoon of salt
- - 2 cups of shredded cheddar cheese
Instructions
To begin, melt the butter in a large pot over medium heat. Add the onions and garlic, sauté until soft. Add the flour, constantly stirring until a paste is formed. Gradually add in the milk, stirring constantly until well combined. Continue to stir the mixture while adding in the chicken broth and half and half. Cook over medium heat until the mixture is thickened.
Stir in the broccoli florets, salt, and pepper. Simmer the mixture over medium heat until the broccoli is tender, usually around 15 minutes. Once the broccoli is soft, turn down the heat and add in the shredded cheddar cheese. Continue to stir the soup until the cheese is fully melted and well incorporated.
Finally, puree half of the soup in a blender until smooth, then add it back into the pot with the remaining soup. Let the soup simmer gently for a few more minutes before serving.
