Ricotta Cheese Malai Peda Recipe

– 2 cups of ricotta cheese
– 1/2 cup of sugar
– 1/4 cup of milk powder
– 1/4 cup of heavy cream
– 1/4 cup of ghee or clarified butter
– 1 tbsp of cardamom powder
– A handful of pistachios, chopped

Instructions:

1. In a large pan, add the ricotta cheese, sugar, and milk powder. Mix well to combine.

2. Cook the mixture over medium heat, stirring constantly. As the sugar begins to melt, the mixture will become more liquid.

3. Once the mixture begins to thicken and stick to the bottom of the pan, add the heavy cream and ghee.

4. Continue cooking the mixture, stirring constantly, until it thickens and begins to pull away from the sides of the pan. This should take about 20-25 minutes.

5. Remove the pan from the heat and let the mixture cool for a few minutes.

6. Add in the cardamom powder and mix well.

7. Using greased hands, roll the mixture into small balls and press down slightly to make a flat top.

8. Garnish the pedas with chopped pistachios.

9. Serve the pedas at room temperature or chilled.
