Mexican Arroz Con Pollo With Cheese Recipe

If you’re looking for a delicious and satisfying meal that’s easy to make, then this Arroz con Pollo recipe is perfect for you! This classic Spanish dish translates to “rice with chicken” and there are countless variations out there. However, this particular recipe is our personal favorite.

Arroz con Pollo Ingredients:

  • 2 chicken breasts (diced)
  • 1 onion (diced)
  • 1 red bell pepper (diced)
  • 1 green bell pepper (diced)
  • 1 ½ cups of basmati rice
  • 3 cups of chicken broth
  • 2 cloves of garlic (minced)
  • 2 tbsp of olive oil
  • 1 tbsp of chili powder
  • 1 tsp of salt
  • 1 tsp of black pepper

Instructions:

1. In a large pot, heat up the olive oil over medium heat. Add the diced onions and garlic, and cook for 3-4 minutes.

2. Add the diced bell peppers to the pot and cook for an additional 5 minutes until everything is softened.

3. Add the diced chicken breast to the pot, along with the chili powder, salt, and black pepper. Cook until the chicken is browned on all sides.

4. Add the basmati rice to the pot and stir until everything is well combined.

5. Add your chicken broth to the pot and stir until it’s evenly distributed. Bring everything to a boil, then lower the heat and cover the pot with a lid.

6. Cook everything for 18-20 minutes or until the rice is cooked and the liquid has been absorbed.

7. Take the pot off the heat and let it rest for 5-10 minutes before serving.

We like to garnish our Arroz con Pollo with fresh cilantro, lime wedges, and avocado slices. You can also add some hot sauce if you want to give it a little extra kick!
