Ingredients

  • 4 bone-in chicken thighs
  • 1/2 cup of miso paste
  • 2 tablespoons of gochujang
  • 2 tablespoons of dark soy sauce
  • 2 tablespoons of light brown sugar
  • 1 tablespoon of grated ginger
  • 4 garlic cloves, minced
  • 4 scallions, sliced
  • 1/4 cup of water
  • Cilantro, for garnish

Instructions

  1. Preheat the oven to 375ºF.
  2. Mix the miso paste, gochujang, soy sauce, brown sugar, ginger, garlic, and scallions in a bowl. Reserve half of the mixture for later.
  3. Place the chicken on a baking sheet and cover it with the mixture. Roast for 30 minutes.
  4. Remove the chicken from the oven and brush it with the remaining mixture. Roast for an additional 15-20 minutes or until cooked through.
  5. Garnish with cilantro and serve hot. Enjoy!

 

Three Cheese Quesadillas with Grilled Peppers

Ingredients:

  • 1 red pepper, sliced
  • 1 green pepper, sliced

  • 8 flour tortillas
  • 1 cup of shredded cheddar cheese
  • 1 cup of shredded Pepper Jack cheese
  • 1 cup of shredded Mozzarella cheese
  • Sour cream and salsa, for garnish

Instructions:

  1. Preheat the grill to medium-high heat.
  2. Toss the peppers and onion in the olive oil and grill for 10-15 minutes or until tender.
  3. Place one tortilla on a skillet over medium heat. Add a handful of each cheese and a spoonful of the grilled peppers and onions. Cover with another tortilla.
  4. Cook until the cheese is melted, then flip and cook the other side until it is golden brown and crispy.
  5. Repeat with the remaining tortillas and ingredients.
  6. Serve hot with sour cream and salsa. Enjoy!
