Long Island Cheese Pumpkin Pie Recipe

Fall is upon us and it’s time to start cooking some delicious pumpkin recipes! One of my favorite types of pumpkin is the Long Island Cheese pumpkin, which is not only perfect for baking, but also for decorative purposes. In this recipe post, I’m going to share with you a recipe for Long Island Cheese Pumpkin Pie. Trust me, your taste buds will thank you!

Long Island Cheese Pumpkin Pie

First, let’s talk about the star of the dish – the Long Island Cheese pumpkin. This deliciously sweet pumpkin has a tan skin and is shaped like a wheel of cheese. Its flesh is perfect for baking, as it’s meaty and not too watery. If you can’t find a Long Island Cheese pumpkin, you can substitute with a similar variety such as a butternut or sugar pumpkin.

Ingredients

  • 1 Long Island Cheese pumpkin (or a similar variety)
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, chilled and cut into small pieces
  • 4-6 tbsp ice water
  • 1 can (15 oz) pumpkin puree
  • 3/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/2 tsp salt
  • 3 eggs
  • 1 1/2 cups heavy cream

Instructions

1. Preheat your oven to 375°F.

2. Cut the Long Island Cheese pumpkin in half and remove the seeds. Cut the pumpkin into chunks and place on a baking sheet. Roast in the oven for 30-40 minutes or until the pumpkin is fork-tender. Remove from the oven and let cool.

3. While the pumpkin is cooling, make the pie crust. In a large bowl, whisk together the flour and salt. Add the butter and use a pastry cutter or your fingers to incorporate it until the mixture resembles coarse crumbs. Add the ice water, one tablespoon at a time, until the dough comes together into a ball.

4. On a floured surface, roll out the dough into a large circle. Transfer the dough to a 9-inch pie dish and trim the edges. Use a fork to prick the bottom of the dough several times. Bake the crust in the oven for 15-20 minutes or until lightly golden. Remove from the oven and let cool.

5. In a large bowl, whisk together the pumpkin puree, brown sugar, cinnamon, ginger, cloves, salt, eggs, and heavy cream.

6. Add the roasted pumpkin chunks to the mixture and use an immersion blender to blend until smooth.

7. Pour the pumpkin mixture into the prepared pie crust. Bake in the oven for 45-50 minutes or until the filling is set and a toothpick inserted in the center comes out clean. Let cool before serving.
