  • 6 tablespoons unsalted butter
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1/3 cup all-purpose flour
  • 3 cups chicken stock
  • 1-1/2 cups milk
  • 1/2 cup heavy cream
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup lager-style beer
  • Salt and pepper to taste
  • 4 cups sharp cheddar cheese, shredded

Instructions

  1. Melt the butter in a large pot over medium heat. Add the onions and garlic, and cook until the onions are softened, about 5 minutes.
  2. Sprinkle the flour over the onion mixture, and whisk until combined. Cook for 2 minutes to make a roux.
  3. Slowly whisk in the chicken stock, milk, and heavy cream. Add the Worcestershire sauce, Dijon mustard, smoked paprika, thyme, and cayenne pepper. Stir in the beer and bring the mixture to a simmer. Cook until the soup has thickened, about 10-15 minutes.
  4. Remove the pot from heat and stir in the cheddar cheese, a handful at a time, until melted and smooth.
  5. Taste the soup and adjust the seasoning, adding salt and pepper as needed. Serve hot with crusty bread and a good beer to drink alongside.
