Philly Cheesesteaks…Jo’s Version for the win!

Ingredients:

  • 1 lb. ribeye steak, thinly sliced
  • 2 Tbsp. canola oil
  • 1 green pepper, sliced into thin strips
  • 1 onion, sliced into thin strips
  • 2 cloves garlic, minced
  • 4 hoagie rolls
  • 8 slices provolone cheese
  • Salt and pepper to taste

Instructions:

  1. Preheat a large skillet over medium-high heat. Add canola oil and swirl to coat.
  2. Add sliced steak and cook for 3-4 minutes until browned on all sides.
  3. Add green pepper, onion, and minced garlic. Cook for an additional 3-4 minutes until vegetables are slightly softened and the steak is cooked to your liking.
  4. Season with salt and pepper, and give it a good mix.
  5. Turn off the heat and place a slice of provolone cheese on top of the meat and vegetables. Let it sit and melt for a minute or two, until it’s ooey-gooey and delicious.
  6. To assemble, split the hoagie rolls in half and place a generous portion of the steak and veggies on each one. Top with another slice of provolone cheese, and pop them under the broiler for a couple of minutes until the cheese is melted and bubbly.
  7. Enjoy your delicious Philly Cheesesteaks!
