  • - 100g bread flour
  • - 80ml boiling water
  • For the Cream Cheese Bun:
  • - 250g bread flour
  • - 30g sugar
  • - 3g salt
  • - 3g instant yeast
  • - 20g butter
  • - 125ml milk
  • - 1 egg
  • - 100g cream cheese
  • For the Burger Bun:
  • - 250g bread flour
  • - 30g sugar
  • - 3g salt
  • - 3g instant yeast
  • - 20g butter
  • - 125ml milk
  • - 1 egg
  • - 1 tbsp sesame seeds

Instructions

Now, let's get started:

1. Make the Yudane: Mix the boiling water and bread flour until it forms a smooth dough. Cover and let rest for at least 4 hours or up to overnight.

2. For the Cream Cheese Bun: In a large bowl, mix the bread flour, sugar, salt, and yeast. Rub in the butter until the mixture is crumbly. Add in the milk, egg, and Yudane dough, and knead until a smooth dough forms. Finally, add in the cream cheese and knead until well combined. Cover the dough and let it rise until doubled in size, about 1 hour.

3. For the Burger Bun: In a large bowl, mix the bread flour, sugar, salt, sesame seeds, and yeast. Rub in the butter until the mixture is crumbly. Add in the milk, egg, and Yudane dough, and knead until a smooth dough forms. Cover the dough and let it rise until doubled in size, about 1 hour.

4. Preheat your oven to 375°F. Divide each dough into 8 pieces and shape them into balls. Arrange them on a baking sheet lined with parchment paper. Cover and let them rise for 15-20 minutes.

5. Brush the buns with egg wash and bake them for 15-20 minutes, or until golden brown.
