Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp cayenne pepper
  • 1/2 tsp salt
  • 8 tbsp unsalted butter, cut into small pieces and chilled
  • 2 cups grated sharp cheddar cheese
  • 1/4 cup ice water

Instructions

Preheat the oven to 375 degrees F.

In a food processor, combine the flour, baking powder, cayenne, and salt. Add the butter and pulse until the mixture has the consistency of coarse meal. Add the cheese and pulse until the mixture is crumbly.

Transfer the mixture to a bowl and add the ice water, a tablespoon at a time, until a dough forms. On a floured surface, roll out the dough into a rectangle about 1/4 inch thick.

Cut the dough into long, thin strips about 1/4 inch wide. Twist each strip into a spiral and place on a baking sheet lined with parchment paper.

Bake for 15-18 minutes, until the cheese straws are golden brown and crispy. Serve warm or at room temperature.
