Four Cheese Pasta Cheesecake Factory Recipe

– 1 pound of pasta (preferably spaghetti or linguine)

– 1 cup of heavy cream

– 1/2 cup of grated parmesan cheese

– 1/2 cup of grated pecorino romano cheese

– 1/2 cup of grated fontina cheese

– 1/2 cup of grated mozzarella cheese

– 3 cloves of garlic, minced

– Salt and pepper to taste

– 2 tablespoons of unsalted butter

– 2 tablespoons of all-purpose flour

– Chopped parsley for garnish (optional)

Instructions:

1. Cook the pasta in salty boiling water according to its instructions. Reserve a cup of pasta water before draining.

2. While the pasta cooks, melt the butter in a large pan over medium heat. Add the minced garlic and cook for 1-2 minutes or until fragrant.

3. Add the flour to the pan and whisk for another minute until the mixture is smooth and golden brown.

4. Gradually pour the heavy cream into the pan while whisking continuously. Be careful not to let the mixture boil.

5. Add the grated parmesan, pecorino romano, fontina, and mozzarella cheeses to the pan. Keep whisking until all the cheese has melted and the sauce is creamy and smooth.

6. Season the cheese sauce with salt and pepper to taste.

7. Add the drained pasta to the pan and toss to coat each strand with the cheese sauce. If the sauce is too thick, thin it out with the reserved pasta water a little at a time until it reaches your desired consistency.
