Flemings Steakhouse Mac and Cheese Recipe, With Chipotle

First, let’s take a look at the ingredients that you’ll need:

  • 1 pound elbow macaroni
  • 4 tablespoons unsalted butter
  • 4 tablespoons flour
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground mustard
  • 2-3 chipotles in adobo sauce, minced
  • 4 cups shredded yellow cheddar cheese
  • 1/2 cup panko breadcrumbs
  • Salt and pepper, to taste

Instructions

1. Preheat the oven to 350 degrees F and butter a 9×13 inch baking dish.

2. Cook the macaroni according to the package instructions. Drain and set aside.

3. In a large saucepan, melt the butter over medium heat.

4. Add the flour and whisk together for two minutes to create a roux.

5. Slowly pour in the milk and cream, whisking constantly until smooth.

6. Add the cayenne pepper, smoked paprika, garlic powder, and ground mustard, and stir to combine.

7. Stir in the minced chipotle peppers and cook the sauce for an additional 5 minutes.

8. Season the sauce with salt and pepper to taste.

9. Add the shredded cheddar cheese to the sauce and stir until melted and smooth.

10. Add the cooked macaroni to the cheese sauce and stir until well combined.

11. Pour the mac and cheese into the prepared baking dish.

12. Sprinkle the panko breadcrumbs over the top of the mac and cheese.

13. Bake for 25-30 minutes, until golden brown and bubbling.

14. Remove from the oven and let cool for 5 minutes before serving.
