Let’s start with the heart of this recipe- the cheese! You will need about 200g of grated cheddar cheese and 50g of grated parmesan. Next, we have the onions. Slice them into thin rounds, until you have about 4 cups worth- trust me, we won’t be skimping on the onions in this one.

For the crust, we will need 225g of all-purpose flour, 110g of cold unsalted butter, 1 egg yolk, 1/4 teaspoon salt, and 5 tablespoons of ice water. Once you have all your ingredients ready, let’s get started on this mouth-watering journey!

To begin with, let’s make the crust. In a bowl mix together the flour and salt. Cut the butter into small cubes and alternatively add to the flour mixture while stirring. Make sure you only add a few pieces of cubes at a time. Do this until the mixture is crumbly with small butter pieces left. Shake the bowl to collect them to one side.

Add one egg yolk and a few tablespoons (between 2 and 3, keep an eye on the dough to see how much it needs) of ice water. Mix with a fork until a shaggy dough forms, then with your hands, form it into a ball, wrap with cling film and refrigerate for at least an hour.

Once chilled, preheat the oven to 200°C and roll out the pastry, lining a 9-inch pie dish. Prick the bottom with a fork to prevent the crust from puffing up while baking. Blind bake with dry beans (or store-bought pie weights) for about 15mins or until lightly golden.

Now the fun part, let’s put together the filling! In a large skillet, melt 2 tablespoons of unsalted butter over medium heat until bubbly. Add in the onions and cook, stirring occasionally until they are tender and golden, for about 25 to 30 minutes.

Once done, remove the skillet from heat and stir in the grated cheddar cheese and parmesan cheese. Season with a pinch of salt and give it a good stir. Pour the filling into the pre-baked crust, making sure to distribute it evenly.

Place the pie into the oven and bake for an additional 30 to 35 minutes, or until the top is golden brown and the cheese is melted and bubbly.
