5. 16 corn husks

7. 1/2 cup shredded cheddar cheese
8. 1/2 cup chopped green onions
9. 1 jalapeño pepper, seeded and finely chopped
10. 1/4 cup chopped fresh cilantro
11. 4 cloves garlic, minced
12. 1 tsp ground cumin
13. 1/2 tsp paprika
14. Juice of 1 lime

Instructions:

1. Soak the corn husks in warm water for about 30 minutes or until they are soft and pliable.

2. In a large mixing bowl, combine the masa harina and salt. Slowly add 2 cups of hot water, stirring until a soft dough forms.

3. In a separate mixing bowl, use a fork to mash the black beans until they are mostly smooth. Add in the shredded cheddar cheese, chopped green onions, jalapeño pepper, cilantro, minced garlic, cumin, paprika, and lime juice.

4. Add the vegetable shortening to the masa dough mixture and mix well.

5. To assemble the tamales, take a soaked corn husk and spread a tablespoon of the masa dough onto the husk, making sure to leave a border around the edges. Add a spoonful of the bean mixture on top of the masa dough.

6. Use the corn husk to roll up the tamale, making sure to fold in the edges as you go. Tie the tamale together at both ends with a small strip of corn husk.

7. Repeat with the remaining corn husks, masa dough, and bean mixture.

8. To steam the tamales, fill a steamer with water and bring to a boil. Place the tamales in the steamer and steam for about 45-60 minutes, or until the masa dough is cooked through. Check the water level periodically and add more water as needed.

9. Remove the tamales from the steamer and let them cool for a few minutes before serving.
