Bakers Cheese Recipe

Ingredients:

  • 1 cup of all-purpose flour
  • 1 cup of milk
  • 2 eggs
  • 3 tbsp of vegetable oil
  • 1/4 tsp of salt
  • 1/4 tsp of baking powder
  • 1/2 cup of cream cheese
  • 1 tbsp of sugar
  • 1 tsp of vanilla extract
  • 1/4 cup of sour cream
  • 1/4 cup of butter melted
  • Confectioner’s sugar for dusting

Instructions:

  1. In a mixing bowl, combine flour, milk, eggs, vegetable oil, salt, and baking powder. Mix until the batter is smooth.
  2. Heat a non-stick skillet over medium heat. Pour 1/4 cup of batter into the skillet, tilting the pan to make the batter spread out into a thin circle. Cook for 2-3 minutes or until the edges become lightly browned.
  3. Flip the blintz and cook for another 30 seconds. Repeat with the rest of the batter. You should get about 10-12 blintzes.
  4. Preheat oven to 350 degrees F.
  5. In a mixing bowl, mix cream cheese, sugar, vanilla extract, and sour cream until they are well combined.
  6. Place 1 tablespoon of the cream cheese mixture in the center of each blintz. Fold the sides of the blintz over the filling and roll it up. Place each blintz in a baking dish.
  7. Drizzle melted butter over the blintzes and bake in the oven for 15-20 minutes or until they are heated through.
  8. Dust blintzes with confectioner’s sugar before serving.
